There are differences in trust law and terminology between Scotland and the UK generally, but this is not a problem.
The various benefit regulations simply refer to a trust. I am a solicitor qualified to practice in England and Wales, but there is no reason why someone in Scotland cannot have a trust written under the law of this jurisdiction.
I used to be concerned that bank branches in Scotland would expect to see trusts drawn up under Scottish law. The banks play an important role in the operation of trusts, but there have been no difficulties for our clients.
